Yogurt and Blueberry Muffins - the perfect after school snack



I’m hungry!!!


Those are usually the first words I hear from my kids when I pick them up after school

Not, ‘Hi Mom, I missed you!’ or ‘Hey Mom, good to see you, how was your day?’

Apparently, my kids are famished after school.

Don’t get me wrong, they had a hearty lunch but I guess they worked hard and played hard at school so they come home with an appetite.

I try to have some healthy snacks on hand that will carry them over until dinner.  Sometimes it’s veggies and dip, fresh fruit or meat cheese and crackers and sometimes it’s muffins.

My kids love these yogurt, blueberry muffins AND with lots of yogurt in my fridge and tonnes of frozen blueberries in my freezer from summer, these muffins make the perfect afterschool snack option we can all feel good about.


Here’s the Recipe

Yogurt Blueberry Muffins


  • 2 cups all-purpose flour (or use half all-purpose, half whole wheat…my one daughter will use Gluten Free flour as well)
  • 1/3 cup sugar
  • 1 Tbsp. baking powder
  • 1/3 tsp. salt
  • 1 cup Vitala yogurt, thinned with a little water to make it runny
  • 1/4 cup oil
  • 2 Vitala or FreeBird eggs
  • 1 cup fresh or frozen berries


Preheat the oven to 400°F. Line 12 muffin cups with paper liners or cooking spray.

In one bowl combine the flour, sugar, baking powder and salt. In another bowl, stir together the yogurt, oil and eggs.

Make a well in the dry ingredients and pour in the wet ingredients. Gently fold with a spatula, and add blueberries after you’ve stirred a few strokes. Mix the batter just until it’s blended. Don’t worry about getting all the lumps out — over-mixing will make your muffins tough.

Fill your prepared muffin cups almost to the top and bake for 20–30 minutes, until golden and springy to the touch. Makes 1 dozen muffins.  (sometimes, when I’m feeling a little crazy I might add a pinch of sugar on top before baking in an attempt to sweeten up my kiddos).



Serve them fresh from the oven with a tall glass of Vitala milk or pack them along when you pick up the kids from school or activities.  Their hunger will be satisfied and the ride home peaceful.

The good news is that when they are greeted with the sight or smell of these Yogurt Blueberry Muffins they are really happy to see me and usually greet me with ‘Thanks Mom!’.
